Beef Stew

I love a warm bowl of beef stew on a cold, rainy day...so guess what in the crock pot right now.

My beef stew is so easy and gluten free. You can make it in the crockpot by adding the ingredients in the order shown or cook it on the stove.

3 cups V8 or 2 cans 11.5 ounces each
2 cups hot water
1 can petite diced tomatoes
3 beef bullion cubes
2 pounds of beef cubed - use bottom round, rump roast, or London broil
10 ounces slices mushrooms
16 ounces frozen mixed vegetables (this is a great opportunity to use up half bags of frozen vegetables)
2 potatoes cubed
1 small onion chopped

Put it all in the crock pot and let it cook away for 4 to 5 hours on high. If you want to thicken it then make a slurry of corn starch and water and pour it in, stir and let it cook on high until its thick about 1/2 hour.
